Fanestil&#8217;s flavorful Party Time Turkey, sour cream, cheese, and mild peppers all combined to make a supremely delectable dish. <h3>Fanestil&#8217;s Party Time Turkey Sour Cream Enchiladas</h3>
<p>This is a recipe you have to prepare ahead, but believe us, it&#8217;s well worth the effort.</p>
<p>Depending on your mood, and the ocassion, you can serve these with a simple green salad or go all out with the refried beans, spanish rice, and pico de gallo*. This recipe yields 14-15 generous servings but you can cut the major ingredients in half to make a smaller batch to serve those more intimate gatherings.</p>

<p style="padding: 2px 6px">
<h4 style="letter-spacing: 0.12em">INGREDIENTS:</h4>
<ul>
<li>2 quarts sour cream (4 16oz containers)</li>
<li>1 quart whole milk</li>
<li>1/4 teaspoon garlic powder (not salt) or minced garlic</li>
<li>3 lbs (about 4 cups) Fanestil&#8217;s Party Time Turkey<br />
cut into 1/2&#8243; cubes</li>
<li>3 lbs shredded medium cheddar cheese</li>
<li>3 or 4 tablespoons butter or olive oil</li>
<li>2 large yellow onions, chopped</li>
<li>2 large bell peppers, seeded and chopped<br />
(1 green and 1 red makes for nice color)</li>
<li>2 jalapeño peppers, seeded and finely chopped</li>
<li>3 doz 8&#8243; flour tortillas</li>
</ul>

<h4>PREPARATION:</h4>
<p class="rbox">Place the butter or olive oil in a large skillet over medium heat and sauté onion and garlic until tender, about 5 minutes.</p>
<p class="rbox">In a large bowl, using a spoon or whisk, thin sour cream with milk. Add sauteéd onion and garlic and stir well. Set mixture aside.</p>
<p class="rbox">Combine the bell and jalapeño peppers together in a bowl and mix together fairly evenly. Roll cheese and cubed Party Time Turkey into tortillas (they should be about 1 1/2&#8243; in diameter) and place in the bottom of a deep 9&#8243; x 12&#8243; casserole. Sprinkle half of the pepper mixture evenly over the rolled tortillas in the pan and cover with half of the sour cream mixture.</p>
<p class="rbox">Repeat the process with the remaining ingredients placing them on top of the existing layer in the casserole.</p>
<p class="rbox">Cover the casserole and place it in the refrigerator for 24 - 36 hours.</p>
<p class="rbox">Cover the casserole with an oven safe lid or foil and place in a 350°F oven. Bake for 1 hour.</p>
<p class="rbox">Serve with side dishes of your choice.</p>
<hr />*Pico de Gallo is a simple salsa with lots of flavor. It is so easy to prepare it might just become a staple at your table. Best if used within a couple of days.</p>
<ul>
<li> 3 medium roma tomatoes seeded and chopped</li>
<li> 1/2 medium yellow onion chopped</li>
<li> 1 tablespoon minced fresh cilantro leaves</li>
<li> 1/2 teaspoon minced garlic</li>
<li> 1 jalapeño pepper seeded and diced</li>
</ul>
<p>Combine all ingredients in a bowl and stir well. Cover and refrigerate for at least 4 hours to allow flavors to blend.</p>

<p>We suggest you serve these tasty crepés with a green salad and a vegetable of your choice. <li>1 cup sour cream</li>
<li>1 teaspoon prepared yellow mustard</li>
<li>1/8 teaspoon ground black pepper</li>
<li>1 cup Fanestil&#8217;s Party Time or<br />
Buffet Ham cut into 1/4&#8243; cubes</li>
<li>1 cup mozzarella cheese</li>
<li>1 teaspoon butter or olive oil</li>
<li>1 clove of garlic, minced</li>
<li>3 tablespoons diced green onion</li>
</ul>

<h4> PREPARATION:</h4>
<p class="rbox"> Place the butter or olive oil in a sauté pan or small sauce pan over medium heat and sauté green onion and garlic until tender.</p>
<p class="rbox"> In a medium bowl, using a spoon or spatula, mix together sour cream, mustard, ham or turkey cubes, and cheese. Add sautéed onion and garlic and mix thoroughly. Set mixture aside.</p>

<h4 style="letter-spacing: 0.12em"> CREPÉS INGREDIENTS:</h4>
<ul>
<li>1 cup all-purpose flour</li>
<li>1 1/4 cups whole milk</li>
<li>1 egg</li>
<li>1 pinch salt</li>
</ul>

<h4 style="letter-spacing: 0.12em"> DIRECTIONS:</h4>
<p class="rbox"> Pre-heat your oven to about 250° and place a piece of baking parchment or foil on a baking sheet, lightly spray the sheet with non-stick cooking spray (not necessary if you use the baking parchment).</p>
<p class="rbox"> In a medium-size mixing bowl, whisk together the flour, milk, egg and salt to make the crepés batter.</p>
<p class="rbox"> Heat a large frying pan or wok over medium high heat. When the pan is hot add a teaspoon of butter and lightly coat the surface of the pan with the melted butter.</p>
<p class="rbox"> Pour one quarter cup of the batter into the pan and tilt the pan with a circular motion so that the batter coats the surface in a thin, smooth and even layer about 8 inches in diameter.</p>
<p class="rbox"> After two minutes, lift up an edge of the crepé with a spatula to see if it is browning. When the underside has begun to brown the top should be firm and dry. Go on to the next step.</p>
<p class="rbox"> With the crepé still in the pan, place 3 rounded tablespoons of the filling on one edge of the crepé and gently roll the filling into it with the edge of your spatula. Remove the filled crepé from the pan and place on your prepared baking sheet and place the sheet in the oven to warm it through. Keep the crepés in the oven to stay warm until served.</p>
<p class="rbox"> Repeat the cooking process. Serve crepés warm from the oven.</p>

<h3> Mustard Cream Sauce</h3>
<p class="rbox"> Our mustard cream sauce uses a basic white sauce as a base. Adding the dry and dijon mustards give it a mild flavor that compliments these tasty ham crepés nicely. If you like a stronger flavor simply add a bit more of the mustards.</p>
<p class="rbox"> You&#8217;ll want to make this while the the crepés are staying warm in the oven. Makes about 1 1/4 cups of sauce.</p>

<h4 style="letter-spacing: 0.12em"> INGREDIENTS:</h4>
<ul>
<li>1 cup half and half</li>
<li>2 tablespoons all purpose flour</li>
<li>2 tablespoons butter</li>
<li>1/8 teaspoon ground black pepper</li>
<li>1/8 teaspoon garlic powder</li>
<li>1 tablespoon dry mustard</li>
<li>1 tablespoon dijon mustard</li>
<li>1 tablespoon of white vinegar</li>
</ul>

<h4> PREPARATION:</h4>
<p class="rbox"> In a medium sauce pan, melt butter over medium heat, whisk in flour, garlic powder and pepper until you have a smooth paste. Be careful not to burn it. Whisk in  the half and half a little (about 1/8 cup) at a time allowing the mixture to heat and thicken before each addition. Continue this until you have added all of the half and half. Keep gently whisking the mixture  to assure that it stays smooth and doesn&#8217;t burn. When mixture is thickened, whisk in dry mustard, dijon mustard, and vinegar until well blended. Remove from heat and serve over crepés.</p>
